cli: Default to LE production

  --acme-live-environment
                        Use this for production clusters. Uses live Let's
                        Encrypt environment instead of staging

We should reduce the number of cli arguments for users. I propose to default to LE production, and have a --letsencrypt-staging parameter to use LE staging.
