Return to default Rocket Chat docker image

We're currently running a fork of Rocket Chat, because we're waiting for a PR to be accepted.

This is the PR: Upstream PR from @maarten : https://github.com/RocketChat/Rocket.Chat/pull/17377

If/when it gets accepted and released, we should return to using Rocket Chat's docker image.

To upload designs, you'll need to enable LFS and have an admin enable hashed storage. More information
