Pin nextcloud onlyoffice plugin version

The plugin sometimes changes the name of buttons, configurations, etc. That breaks CI tests without us changing anything, so we should definitely pin them, if we can.

Based on Varac's research for #1008 (closed) this seems impossible. The apps are updated nowadays, though.

I think I found a way and I'm getting super frustrated by random pipeline breakage, so I'm picking this up again.
