Upgrade to Kratos 1.0.0 gives helm errors

We noticed this on staging:

Helm upgrade failed: cannot patch \"kratos-courier\" with kind StatefulSet: StatefulSet.apps \"kratos-courier\" is invalid: spec: Forbidden: updates to statefulset spec for fields other than 'replicas', 'template', 'updateStrategy', 'persistentVolumeClaimRetentionPolicy' and 'minReadySeconds' are forbidden

Unfortunately it doesn't say which field is being updated 🤦 . For piece of mind I'll try to find out what is being changed here. Unless it's something we don't want to be changed (or don't care about) and that we can keep at the old value with an override, the solution to this will probably be to reinstall kratos instead of upgrading.
